Mushroom Tacos

Ingredients:

  • For the Mushroom Filling:

    • 1 pound (450 g) mushrooms (button, cremini, or a mix), cleaned and sliced
    • 1 tablespoon olive oil
    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1 bell pepper, chopped (optional)
    • 1 teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon chili powder
    • 1/2 teaspoon dried oregano
    • Salt and pepper to taste
    • 1 tablespoon soy sauce or tamari
    • 1 tablespoon lime juice
  • For the Tacos:

    • 8 small tortillas (corn or flour)
    • Fresh cilantro, chopped (for garnish)
    • 1 avocado, sliced
    • 1 cup shredded lettuce or cabbage
    • 1 cup diced tomatoes
    • 1/2 cup crumbled feta cheese or shredded cheddar (optional)
    • Lime wedges (for serving)
    • Salsa or hot sauce (optional)

Instructions:

  1. Prepare the Mushroom Filling:

    • Heat the olive oil in a large skillet over medium heat.
    • Add the chopped onion and cook until translucent, about 5 minutes.
    • Add the minced garlic and cook for another 1 minute until fragrant.
    • Add the sliced mushrooms and bell pepper (if using). Cook, stirring occasionally, until the mushrooms release their moisture and become golden brown, about 8-10 minutes.
    • Stir in the ground cumin, smoked paprika, chili powder, dried oregano, salt, and pepper.
    • Add the soy sauce or tamari and lime juice. Stir to combine and cook for an additional 2-3 minutes until the flavors meld. Adjust seasoning if needed.
  2. Warm the Tortillas:

    • Heat the tortillas in a dry skillet over medium heat until they are warm and pliable, about 30 seconds per side. Alternatively, you can warm them in the oven or microwave.
  3. Assemble the Tacos:

    • Place a portion of the mushroom filling in the center of each tortilla.
    • Top with shredded lettuce or cabbage, diced tomatoes, avocado slices, and crumbled feta cheese or shredded cheddar if using.
    • Garnish with chopped fresh cilantro and a squeeze of lime juice.
    • Add salsa or hot sauce to taste if desired.
  4. Serve:

    • Serve the mushroom tacos immediately while they’re warm, with additional lime wedges and salsa on the side.

Tips:

  • Mushroom Variety: A mix of mushrooms can provide a richer flavor and varied texture.
  • Toppings: Feel free to customize your tacos with additional toppings like pickled onions, sliced jalapeños, or sour cream.
  • Spice Level: Adjust the amount of chili powder and hot sauce to suit your taste preferences.
